chicken %26amp; mixed veg stirfry with noodles
2 chicken breasts cut into small peices
vegetable oil
sesame oil
i clove garlic
2 carrots peeled
half of a red, yellow and green pepper
2 celery stalks
bean sprouts
dark soya sauce
oyster sauce
egg noodles
cook noodles for 2-3 minutes until soft %26amp; keep to one side
slice 2 carrots, half of each pepper %26amp; celery stalks %26amp; place to one side
heat wok until hot add vegetable and sesame oil, add garlic, peppers, carrots fry for 30 seconds %26amp; then add celery and about 200g of beansprouts.
add splash of soya sauce, then take all out of the wok and set aside.
add more vegetable oil if needed %26amp; cook chicken, when chicken is ready add all veg back to the wok.
add about 2tbsp of soya and oyster sauce, cook for a minute and serve
this dish is so easy to make and it delicious. try making some garlic potatoes with it as a side.

also try Bok Choy, bean sprouts ginger strips for some kick

my stir fry usually has chicken, rice, red peppers, carrots and peas (snow peas or regular peas). i have picky eaters, anything other than that, they wont eat it!!

Ingredients:
FOR THE MARINADE
2 tsp Brown sugar
80 ml Soy sauce
1 tsp Cornflour
20 ml Lemon juice
For the stirfry
375 gm Chicken breast, skinless, cut into 5cm (2inch) strips (12oz)
2 tsp Olive oil
2 stalk celery, cut into 5cm (2inch) sticks
2 Carrots, peeled and cut into 5cm (2inch) sticks
1 Red pepper, deseeded and cut into 5cm (2inch) sticks
8 Salad onions, cut into 5cm (2inch) diagonals
175 gm Bean sprouts, (6 oz)
Method:
1. Mix together the ingredients for the marinade.
2. Add the chicken strips, cover and refrigerate for 30 minutes.
3. Heat the oil in a wok or large pan and cook the carrots for 2 minutes.
4. Add the chicken strips, marinade, red pepper,salad onions and bean sprouts and cook for 7 minutes.
5. Serve hot.
Notes:
This can be served on a bed of medium noodles.
NOTES : A spicy stir fry, low in fat and easy to prepare.
