Good Bayou Chicken recipes?

There was a hole-in-the-wall restaurant I used to eat at that had a ';Bayou Chicken'; menu item. It was sooo delicious! The sauce was kind of thick and spicy, there were tomatoes in it.

I have tried various recipes online, but none of them are even remotely close to what I am looking for.

It was eaten on a plate, NOT in a bowl like soup.

Do you have any great Bayou Chicken recipes to recommend?Good Bayou Chicken recipes?
