Recipes with Chicken Breasts?

I need some recipes with chicken breasts. I have a whole bunch in my freezer and I need some ideas for easy, quick meals. Kid-friendly would also be a big help too! Thanks in Advance!Recipes with Chicken Breasts?
Chicken Quesadillas- I make mine with whole wheat tortillas and whole pinto beans...very versatile.





Chicken Potpies- good way to get some extra veggies into the kids and way better than the frozen ones. Great recipe on the side of a Bisquick box.





Chicken Pasta- just make pasta per usual, and either boil or grill the chicken breast, slice it up and your good to go. Yum!

Chicken Fajitas





cook and shred the chicken breasts


heat tortilla shells and spread on sour cream


add some salsa and chicken


top with shredded cheddar cheese


wrap up tortilla and enjoy
cut into bit size pieces fry them with french fries or baked them with mashed potatos
I like to take the breasts and put them in a skillet with some EVO(extra virgin olive oil) and sear them. Before doing so I like to sprinkle them with some Cajun seasoning Yummy! and then I serve with steamed rice my kids love it as long as there isnt to much Cajun!
You could boil them and add vegies that makes a good chicken soup or you can boil them and shred them for chicken tacos/enchiladas. Or you can just thaw them and throw them on the BBQ.
Garlic Chicken

INGREDIENTS


2 teaspoons crushed garlic


1/4 cup olive oil


1/4 cup dry bread crumbs


1/4 cup grated Parmesan cheese


4 skinless, boneless chicken breast halves





DIRECTIONS


Preheat oven to 425 degrees F (220 degrees C).


Warm the garlic and olive oil to blend the flavors. In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken


breasts in the olive oil and garlic mixture, then into the bread crumb mixture. Place in a shallow baking dish. Bake in the preheated oven for 30 to 35 minutes, until no longer pink and juices run clear.
Chicken Breast Florentine:





1 day 1 day prep


4 servings





4 chicken breasts


2 teaspoons olive oil


1 teaspoon shallots, minced


1 teaspoon garlic, minced


1 cup white wine


1/2 cup heavy cream


4 tablespoons grated parmesan cheese


1 cup fresh spinach, cut in strips


8 ounces angel hair pasta, cooked according to package instructions


salt %26amp; pepper


marinade


1 cup olive oil


1 teaspoon garlic, minced


1 teaspoon oregano


2 teaspoons fresh rosemary, chopped





1. Prepare marinade.


2. Marinate chicken breasts for 24 hours.


3. Preheat oven to 350 degrees.


4. Remove chicken from marinade and pat dry with paper towels.


5. Saute chicken in 2 tsp olive oil in a hot skillet until lightly browned on both sides.


6. Remove from pan and finish cooking in oven 35 minutes.


7. Meanwhile add to skillet shallots, garlic, white wine, cream, parmesan cheese, spinach%26amp; salt%26amp; pepper to taste.


8. Simmer 3 to 5 minutes until well blended and spinach is limp.


9. Serve sauce hot over chicken with angel hair pasta.
season and sautee them in a lightly oiled pan and then pour a can of cream of mushroom soup over them. then, let it simmer on low with a lid on it for 15-20 minutes.
You could make chicken fingers, if you just slice them up and fry them. Give the kids a few dipping sauces, like Ranch salad dressing, and ketchup. You could fry them with just some flour, or my secret ingredient is to use crushed up crackers instead!
Easy Parmesan-Garlic Chicken and Pasta

1/2 cup KRAFT 100% Grated Parmesan Cheese, divided


1 env. GOOD SEASONS Italian Salad Dressing %26amp; Recipe Mix


1/2 tsp. garlic powder


6 small boneless skinless chicken breast halves (1-1/2 lb.)


1 pkg. (13.25 oz.) RONZONI庐 HEALTHY HARVEST庐 Rotini Pasta


1 jar (26 oz.) CLASSICO庐 Fire Roasted Tomato %26amp; Garlic Pasta Sauce, divided


2 Tbsp. thinly sliced fresh basil





PREHEAT oven to 400掳F. Mix 1/3 cup of the cheese, the salad dressing mix and garlic powder. Moisten chicken with water; coat evenly with the cheese mixture. Place in single layer in shallow baking pan sprayed with cooking spray. Bake 20 to 25 min. or until chicken is cooked through (165掳F).


MEANWHILE, cook pasta in large saucepan as directed on package; drain and set aside. Add sauce to same saucepan; cook on medium-low heat 5 to 6 min. or until heated through, stirring occasionally. Remove 3/4 cup of the sauce; set aside for later use. Add pasta to remaining sauce; toss gently to coat.


SPOON about 1-1/2 cups of the pasta mixture onto each of six serving plates. Top each with a chicken breast and 2 Tbsp. of the reserved sauce. Sprinkle evenly with basil and remaining cheese.








Garden-Fresh Pasta Toss

Makes: 8 servings, about 2-1/2 cups each





1 lb. medium shell macaroni, uncooked


1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces


1 env. GOOD SEASONS Italian Salad Dressing %26amp; Recipe Mix


1/4 cup olive oil, divided


1 bag (6 oz.) baby spinach leaves


2 cups cherry tomatoes, halved


2 medium yellow or orange peppers, coarsely chopped


1/2 cup KRAFT 100% Grated Parmesan Cheese





COOK pasta as directed on package.


MEANWHILE, sprinkle chicken with salad dressing mix; toss to coat. Heat 1 Tbsp. of the oil in large nonstick skillet. Add chicken; cook and stir 5 min. or until cooked through. Remove from heat; set aside until ready to use.


DRAIN pasta; place in large bowl. Add chicken and all remaining ingredients; mix lightly.





Jazz It Up


To help boost the flavor of the peppers, add them to the cooking water for the last few min. of the macaroni cooking time.

Hot Italian Chicken Sandwiches

Makes: 4 servings, one sandwich each





4 small boneless skinless chicken breast halves (about 1 lb.)


1/2 pkt. SHAKE 'N BAKE Original Chicken Seasoned Coating Mix


1/2 cup spaghetti sauce


3/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese


4 crusty buns, split, toasted





PREHEAT oven to 400掳F. Coat chicken in coating mix as directed on package. Place on foil-covered baking sheet.


BAKE 20 min. or until cooked through. Top with sauce and cheese. Bake an additional 5 min. or until cheese melts.


FILL buns with chicken.





Jazz It Up


For an authentic, yet easy topping to your sandwiches, saut茅 1 each red and green pepper and 1 small onion, sliced, in nonstick skillet sprayed with cooking spray until tender.

Zippy Chicken coleslaw





INGREDIENTS


1 tablespoon paprika


1/2 teaspoon dried thyme


1/4 teaspoon sugar


1/4 teaspoon salt


1/4 teaspoon onion powder


1/4 teaspoon garlic powder


1/4 teaspoon pepper


1/8 teaspoon cayenne pepper


1/2 pound skinless, boneless chicken breast halves


1 (3 ounce) package ramen noodle pasta with flavor packet


4 cups shredded cabbage


2 cups broccoli coleslaw mix


3 green onions, chopped


2 tablespoons sesame seeds, toasted


2 tablespoons sliced almonds, toasted





DRESSING:


3 tablespoons sugar


2 tablespoons reduced-sodium soy sauce


4 1/2 teaspoons cider vinegar


2 1/4 teaspoons water


2 1/4 teaspoons canola oil


1/8 teaspoon pepper


DIRECTIONS


In a small bowl, combine the first eight ingredients; rub over both sides of chicken. Broil 3-4 in. from the heat for 5-6 minutes on each side or until juices run clear. When chicken is cool enough to handle, shred with two forks; cool completely.


Set aside seasoning packet from ramen noodles. Break noodles into small pieces; place in a large bowl. Add the cabbage, broccoli coleslaw, onions, sesame seeds, almonds and chicken. In a jar with a tight-fitting lid, combine the dressing ingredients. Add the contents of seasoning packet; shake well. Pour over coleslaw and toss to coat.





Key West Chicken





This recipe from the Florida Keys has been given to almost everyone I know. It is the best marinade for chicken, and it only takes 30 minutes from prep till you can grill! It's a great blend of flavors with honey, soy sauce and lime juice.


Ingredients


3 tablespoons Soy sauce


1 tablespoon Honey


1 tablespoon Vegetable oil


1 teaspoon Lime juice


1 teaspoon Chopped garlic


4 Skinless, boneless chicken breast halves


Preparation


In a shallow medium dish, blend soy sauce, honey, vegetable oil, lime juice and garlic. Place chicken breast halves into the mixture.Marinate in the refrigerator at least 30 minutes.Preheat an outdoor grill for high heat and lightly oil grate. Place marinated chicken on the prepared grill. Cook 6 to 8 minutes on each side, until meat is no longer pink and juices run clear.





Chicken Salad Deluxe





1 录 cups prepared buttermilk salad dressing 鈥?I make my own from the dry pack.


陆 cup mayonnaise


3 tablespoons half and half


1 戮 teaspoons Beau Monde seasoning


1 teaspoon salt


陆 teaspoon pepper


5 whole chicken breasts (about 2 pounds), skinned cooked and cubed 鈥?I boil mine in chicken stock


10 oz. shell macaroni, cooked, rinsed, and drained and cooled


3 cups diced celery


2 陆 cups seedless green grapes, cut lengthwise into halves


12 oz slivered almonds, reserve 1 tablespoon for garnish


2 cans (2.25 oz each) sliced water chestnuts


陆 cup chopped onion


Lettuce leaves


Cantaloupe slices





Combine salad dressing, mayonnaise, half and half, seasoning, salt and pepper in small bowl; blend will. Cover; refrigerate overnight to blend flavors.





Combine chicken, shells, celery grapes, almonds, water chestnuts and onion in large bowl. Pour dressing over salad; toss gently to coat. Serve on lettuce. Garnish with reserved almonds. Serve with cantaloupe slices.





Makes 20 servings, but my family of 4 eats half the first day and finishes the rest the next. This is my all time favorite pasta dish. What鈥檚 nice is you can do the dressing one day and do the rest the next.





Cabbage Poppy Seed





3 c. uncooked noodles


1/4 c. butter


3 c. shredded cabbage


3 chopped green onions with tops


2 c. chopped, cooked chicken


1 tsp. poppy seeds


1/4 tsp. salt


Dash pepper


1/2 c. sour cream


Cook noodles until tender and keep warm. Steam cabbage until hot (crisp). Saute onions in butter. Stir in noodles, poppy seeds and seasonings, cabbage, sour cream and chicken. Stir to coat and serve.
You can cut your chicken in strips and stir fry with your favorite vegetables (peppers, onions, little corn, etc) and add soy sauce or teriyaki sauce.

I saw this on a PBS cooking show, forgot 1/2 of it, but this is what I do.





Pound boneless chicken breast between plastic wrap until about 1/4 inch or less thick....season both sides with a little season salt and pepper, lay a thin layer of stuffing to just a bit less than edge, roll, then roll uncooked bacon (proscuito is sooo good), around chicken breasts, then just brown in pan, finish in oven (about 20 min).





OR same method, just layer thin slices ham and a great cheese, such as gouda, roll pounded chicken breasts around ham/cheese, use a toothpick to hold together, roll in fine breadcrumbs, brown LIGHTLY in hot oil, again, finish in oven.





OR: thinly slice chicken breasts, marinate slices in either a mexican or asian seasoning......for mexican, grill or saute with onions/sweet peppers, and serve with warm flour tortillas......sort of like a fajita.....or asian, stir fry with any veggies your family likes (leftovers are great in fried rice)





OR:


Simply season with your favorite seasonings, grill, fry or bake





OR:


Season with your favorite seasoning, take 1 C uncooked rice, 3 C chicken or vegetable stock, mix together in casserole, tuck seasoned chicken breasts in, cover tightly with foil and bake @ 350 for 45 min to 1 hour, until chicken and rice are tender. You could use 1 can cream of mushroom or chicken or brocolli or any cream soup, with 2 cans water.





There are so many wonderful things you can do with chicken breasts, and don't forget BBQ now that it's BBQ weather.





Left overs can always be used in chicken salad, topping of a tossed or cesar salad, or a last minute addition to a canned soup.

marinate chicken in italian salad dressing overnight or for almost 8hrs.grease an oven dish and put the marianted chicken pieces and chop up some red peppers,tomatoes, onions if you want and bake.


i am 100% sure you will make it again and again if you make it once.

I coat the chicken with Italian style shake n' bake.


Cook chicken until done in oven.


Heat up marinara sauce on the stove.


When chicken is done, I put some sauce on top of each breast and then sprinkle with shredded mozzarella.


Put back in oven until cheese is melted.


I serve with thin spaghetti or angel hair pasta with marinara sauce.

Oven Fried Chicken





Make three ';dipping stations';





Season the chicken with all purpose seasoning.


Cover in first bowl which you have filled with flour %26amp; a little extra seasonings





Dip in second bowl which contains two eggs beaten.





Cover in third bowl which has bread crumbs in it!... Italian or whatever style you like.





Place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix


1 Tbsp. chili powder


4 small boneless skinless chicken breast halves (1 lb.)


1 cup KRAFT Mexican Style Shredded Cheddar Jack Cheese











PREHEAT oven to 400潞F. Combine coating mix and chili powder in shaker bag. Use to coat chicken as directed on package. Place in 8-inch square baking dish.


BAKE 20 min.


SPRINKLE with cheese. Bake an additional 10 min. or until chicken is cooked through (170潞F) and cheese is melted.

4 small boneless skinless chicken breasts (1 lb.)


1 pouch SHAKE 'N BAKE Original Chicken Seasoned Coating Mix


2 Tbsp. pesto


1/4 cup KRAFT Shredded Mozzarella Cheese











PREHEAT oven to 400潞F. Coat chicken evenly with coating mix. Place in 8-inch square baking dish.


BAKE 20 min. or until chicken is cooked through (170潞F).


TOP chicken evenly with pesto; sprinkle with cheese. Bake an additional 5 min. or until cheese is melted and lightly browned.

1 Tbsp. oil


4 small boneless skinless chicken breast halves (1 lb.)


1 cup TACO BELL庐 HOME ORIGINALS庐 Thick 'N Chunky Salsa


1 pkg. (10 oz.) frozen corn


2 cups instant brown rice, uncooked


1/4 cup KRAFT 2% Milk Shredded Reduced Fat Cheddar Cheese











HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 4 min. on each side or until cooked through (170掳F).


REMOVE chicken from skillet; set aside. Add 2 cups water, the salsa and corn to skillet; mix well. Bring to boil.


STIR in rice. Reduce heat to low; cover. Simmer 5 min. Top rice mixture with the chicken; sprinkle with cheese. Cover; simmer an additional 5 min. or until cheese is melted.
