Easy Chicken Enchiladas
INGREDIENTS:
8 flour tortillas, 6-inch
melted butter
2 cups diced cooked chicken
3/4 cup sliced ripe olives
2 tablespoons chopped onion
1/2 cup shredded Cheddar or Monterey Jack cheese

Sauce
1 clove garlic, crushed
1 tablespoon olive oil
2 cans (8 ounces each) tomato sauce
1 cup water
1 1/2 teaspoon chili powder

Topping
2 tablespoons chopped onion
1/4 cup shredded Cheddar or Monterey Jack cheese
PREPARATION:
Brush tortillas with butter on both sides. In center of each tortilla, pile about 1/4 cup of the diced chicken, a tablespoon or two of the ripe olives, a scant teaspoon of chopped onion, and a sprinkling of shredded cheese.
Roll up and place filled tortillas side by side in a buttered baking dish, 11x7-inch or 9-inch square. In a small saucepan, saut茅 garlic in oil for 1 minute. Add tomato sauce, water, and chili powder. Pour sauce over the rolls, and sprinkle with 2 tablespoons chopped onion and 1/4 cup shredded cheese. Bake at 350掳 for 15 to 20 minutes, until hot.

Spicy Chicken Spaghetti
INGREDIENTS
1 (16 ounce) package uncooked spaghetti
1 cup Worcestershire sauce
1 cup ketchup
1 cup tomato sauce
1 cup chopped green bell pepper
1 cup chopped onion
1/2 cup brown sugar
1 teaspoon chili powder
1 whole cooked chicken, deboned and chopped
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook 8 to 10 minutes, until al dente, and drain.
In a separate pot, mix the Worcestershire sauce, ketchup, tomato sauce, green bell pepper, onion, brown sugar, and chili powder. Bring to a boil. Mix in the chicken, reduce heat to low, and simmer 10 minutes, or until chicken is heated through. Mix in the cooked spaghetti, and serve warm.
Take a boneless chicken breast,slice it through and stuff with a good tasting cheddar cheese then wrap a bacon rasher around it.
Place on a baking tray on 160 for about 30 mins.Then serve with a jacket potato and green salad.Absolutely delicious.
Easy Chicken and Pasta Parmesan:

3-4 servings
1 tablespoon butter or margarine
1 lb boneless skinless chicken breasts, cut into 1/ 2-inch pieces
1/4 cup chicken broth or low sodium chicken broth (14-1/ 2 oz can)
1/2 cup spaghetti sauce (14 oz jar)
1/2 teaspoon dried basil
1/2 teaspoon oregano leaves
3 cups rotini pasta (8oz) or penne rigate, uncooked (8oz)
3/4 cup parmesan cheese, grated
1. In 10 inch skillet over medium-high heat, melt butter; add chicken.
2. Cook, stirring occasionally, until no longer pink, about 3 minutes.
3. Add chicken broth, spaghetti sauce and seasonings; heat to boiling.
4. Add uncooked pasta, stirring to coat with liquid.
5. Cover; reduce heat. Simmer 15 minutes, stirring every 2 minutes or until most liquid is absorbed.
6. Remove from heat; stir in Parmesan cheese. 5 servings (1 cup each)
Shake and Bake is good, also Southern Fried.
cook the chicken in a frying pan, add some garlic, basil, oregano, salt and pepper to taste. Once cooked set aside, fry some diced bacon, once cooked put with chicken. Now fry some button mushrooms, or sliced (canned), then add a can of diced tomatoes and a can of strained peas or peas and carrots for more colour.
Add the bacon and chicken and simmer. You can chicken bouillon and soya sauce to taste, and more garlic, basil and oregano, salt and pepper for taste. Simmer. Once done, serve over a bed of rice. Awesome dinner, family favorite here.

Here's a simple Southern approach. Season boneless chicken breasts lightly with a nice commercial seasoning (we like Durn Good seasoning here), then spray lightly with Pam for Grilling.
Grill over a medium fire (gas or charcoal) and let rest for a couple of minutes. We use the cookout calculator at charcoalbob.com for instructions on how to grill boneless chicken breasts so that they come out nice and juicy.
Put a little of your favorite barbecue sauce into a dish to use as a dipping sauce. We like this because it is simple enough for a week night and delicious.
Take 6(change the amounts depending on how much chicken you have... this would work for one pound) cloves of garlic %26amp; mash them (you can use a food processor or a mortar %26amp; pestle)
add salt, oregano, %26amp; a little bit of olive oil..make into a paste
If you have all purpose seasoning sprinkle some all over the chicken then rub the paste all over the chicken breasts (you may want to cut some slits in the chicken to get seasoning inside)
Put in a pan with a little bit of butter to saute (you can also add half a cup of white wine %26amp; a tablesppon of lemon juice, this part is optional... I just love how juicey %26amp; tasty it comes out)
Serve on top of plain pasta or on the side of rice pilaf

Oven Baked Fried Chicken...
Make three ';dipping stations';
Season the chicken with all purpose seasoning.
Cover in first bowl which you have filled with flour %26amp; a little extra seasonings
Dip in second bowl which contains two eggs beaten.
Cover in third bowl which has bread crumbs in it!... Italian or whatevr style you like.
Then fry it in an inch of vegetable oil or simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.

I`m a lover for cheese %26amp; this just hits the spot.
Maynot be quick %26amp; easy to make but it sure is worth it w/ all the hard work and time you`ll spend.
BAKED PARMESAN CHICKEN
1/2 cup all purpose flour
1/2 cup parmesan cheese (grated)
2 tsp dried basil leaves
1 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic
1/4 cup butter
1/3 cup milk
6 split chicken breasts
Preheat oven to 400 degrees.
In 13x9in baking pan melt butter in oven. Meanwhile in bowl mix all ingredients exept milk and chicken.
Dip chicken breasts in milk and then coat in flour mixture. Dip chicken in butter then place skin side up in pan. Bake for 45 to 50 minutes or until chicken is fork tender and golden brown.
(Parmesan cheese forms a crunchy coating on this oven-baked chicken.)
MAKE A PACKET OUT OF ALUMINUM FOIL AND ADD I BONELESS SKINLESS CHICKEN BREAST. COVER WITH HALF A JAR OF SALSA (I USE GENERIC SAMS CHOICE BRAND MEDIUM). SEAL THE PACKET UP TIGHT.BAKE AT 350 DEGREES UNTIL DONE( I USUALLY MAKE TWO PACKETS AND IT TAKES ABOUT AN HOUR).SERVE OVER YOUR FAVORITE COUSCOUS OR RICE. I ALSO, MAKE A BAG OF FROZEN VEGGIES TO SERVE WITH IT.IF I AM IN A HURRY I WILL CUT UP MY CHICKEN IN BITE SIZE PIECES AND PUT MY CHICKEN AND SALSA IN A SAUCE PAN %26amp; COOK ON MEDIUM HEAT FOR 10-15 MINUTES OR UNTIL YOUR CHICKEN IS DONE.EITHER WAY IS DELICOUS!
chicken is a great meat to play with!! i personally like to take my chicken and cook it in the oven or on the grill with italian dressing!! it is delicious and really low in fat!! i also like to buy treiyaki sauce and cook it in the oven or grill with that too!! you pretty much can do anything with chicken try cooking it in the oven with a can of cream of mushroom it is really good too!! good luck :):)
