Chicken with Pistachio-Parsley Pesto

1 (1-pound) box fusilli

1/3 cup plus 1 tablespoon reduced-sodium chicken broth, and more if needed

1 pound cubed chicken

1 packed cup fresh parsley leaves

2 tablespoons roasted pistachio nuts

3 cloves garlic, peeled

Salt and ground black pepper

Cook fusilli according to package directions.

Heat 1 tablespoon of the broth in a large skillet over medium heat. Add chicken and cook 5 minutes, until golden brown on all sides.

Meanwhile, in a blender, combine parsley, remaining broth, pistachio nuts, and garlic. Process until smooth, adding more broth, if necessary, to create a sauce-like consistency.

Add sauce to chicken in skillet and cook 1 minute to heat through. Season, to taste, with salt and black pepper. Serve immediately.Chicken maryland recipes?
You don't say whether it's whole, pieces or boneless skinless... this will work for cut up or any sort of boneless pieces:

Put chicken in baking dish, pour a jar of spaghetti sauce over it, cover with lid or foil, bake in preheated oven, 350 degrees, 1hr. Uncover, bake 15 min longer. Serve with cooked pasta and top with parmesan cheese. Nice bread and salad or green beans to accompany.

Put chicken pieces in baking dish, add chunks of cut up carrots or 1lb baby carrots... wash and cut up some potatoes and add those... whisk together 1 can cream of mushroom soup, 1/2 can water or white wine, 1 envelope dry onion soup mix, pour over chicken. Bake, covered, in preheated 350 degree oven 1 hour. Uncover and bake 15 min longer.

Okay here is the recipe:

1 pint of live natural yogurt

1 Tablespoon Cumin powder

1 Tablespoon garam massala

1 Teaspoon Coriander powder

1 Teaspoon Turmeric powder

1 Teaspoon Chili Powder

Juice 1 lemon

5 cloves garlic - crushed

1 inch grated ginger

Red food colouring

4 Chicken Breasts / Maryland Cubed (if boneless) other wise just marinate after removing the skin!

and 1 Lemon

Directions:

Mix the spices, colouring, lemon juice, ginger and garlic up into a paste with a little water and stir in well with the yogurt to make a tandoori marinade. Marinate the chicken in the marinade for 2-60 hours. Preheat the oven to it's highest heat for at least 20 minutes. Shake off excess marinade and place chicken pieces on skewers on a wire rack in the oven. Cook for 15-20 minutes and check the chicken is cooked by piercing the thickest piece with a skewer, if the juices run clear it's cooked, serve with a wedge of lemon.
BAKED CHICKEN MARYLAND

1 lg. frying chicken (I use chicken breasts, legs %26amp; thighs)

1/2 c. flour

1 tsp. salt

2 tbsp. finely chopped green pepper

1/4 tsp. paprika

2 tbsp. finely chopped celery

5 tbsp. oil

2 slices bacon

1 c. water

Cut chicken in serving pieces (if using whole chicken); roll in flour. Heat oil in pan and brown chicken. Place browned chicken in baking dish. Pour water into the frying pan and boil for 2 minutes. Add the celery and green pepper. Pour over the chicken. Sprinkle with salt and paprika and top with the bacon. Cover and bake slowly (325 degree oven) for 1 1/4 hours. Inspect frequently and add more water if the chicken seems dry. NOTE: I remove the skin from the chicken before I brown it.
