Does anyone have any good recipes for chicken mince?

Burgers, pies or anything.....Does anyone have any good recipes for chicken mince?
2 cups minced chicken


2 shallots


1 rib of celery


1 egg


4 T. sherry


Puff pastry


1 T. butter


Salt and pepper





Finely dice the shallots and celery and cook in butter until soft. Beat the egg with 1 T. of water. Pour half of the beaten egg into a bowl with minced chicken, add sherry, salt and pepper, shallots and celery.





Bring pastry to room temp and cut each sheet into 4 squares which will equal 8 pieces.





Mix meat together until all ingredients are incorporated. Divide mixture into 8 portions. Place on on half of each square. Brush some of the remaining egg wash on the edge of the pastry that the meat is on. Fold other half over meat and match the point and edges. Press down on two sides with a fork to seal edges. Snip a hole in the center of the top of each pastry, with shears.





Brush tops of pastries with the remaining egg wash. Put in preheated 400 degree oven on sheet pan, turn temp to 350 after pastry rises, and cook for 20 minutes.Does anyone have any good recipes for chicken mince?
This is a green curry made with minced chicken


Ingredients for 2 people (Medium Hot)


200 gms. Chicken Mince


50 gms. Green Curry Paste


400 ml Coconut Milk


2 Tablespoons Fish Sauce


1 Teaspoon Salt


2 Teaspoons Sugar


50 gms. Small Green Aubergine


5 gms Basil


2 Red Chilles


2 Kaffir (Citrus) Leaves











Preparation


1. Put a medium sized pan on the heat, add the coconut milk and cook for 1 minute.


2. Add the green curry to the pan and stir it untill mixed, bring to the boil.


3. When the curry is boiling, add the chicken mince using a teaspoon. The aim is to make round ball shaped mince balls.


4. Cook for 10 minutes until the chicken is thoroughly cooked.


5. Add the fish sauce, salt, sugar, red chillis, aubergines, citrus leaves, basil (basically all the other ingredients) and stir it for a few seconds over the heat to warm them through.


6. Turn the heat off and serve it warm with hot rice or rice noodle.
Try this: Mix ground chicken with garlic and onion powder, salt pepper, a little cayenne pepper, some worcestshire sauce. Cook it in a lttle butter in a skillet. Stir constantly, making the ground meat form tiny, tiny little balls. When it's done, put into a bowl with finely chopped celery and boiled egg. Blend in enough miracle whip or mayo to make it creamy. Grab your favorite bread and make sandwiches. The meat will actually turn grayish in color, but will taste amazing!!
