Good chicken recipes?

I have chicken breasts w/bone. I was thinking something a little different. I dont have a lot of ingredients so please keep it simple. I do have garlic, pasta, potatoes, some marinades( i would like to cook it in a few hours) Any ideas?Good chicken recipes?
put the chicken in a pot on the stove with water, garlic and onion and your favorite spice blend. Boil it until cooked thoroughly( do not remove skin). Take the chicken out of the water, and bake in a glass pan in a 350 oven until prettily browned. Meanwhile, boil the chicken broth until it is reduced to a fairly thick sauce. Serve over pasta or with mashed potatoes and a veggie! Makes a great gravy. I cook mine in a cast iron skillet instead, then just take the whole thing and move it to the oven and brown the meat without dirtying another pan, but I realize most folks don't use cast iron anymore.hope this helps!Good chicken recipes?
Cherry glazed chicken breasts:





1 can cherry pie filling


4 boneless chicken breasts





Heat oven to 350 degrees F. Place the chicken breasts in a glass baking pan that has been sprayed with a non-stick cooking spray like Pam. Spoon just enough of the cherry pie filling over the chicken to cover lightly. Place pan into oven and cook for 1 hour and 15 minutes spreading more of the pie filling over the chicken every 15 minutes.





This is very easy and you get a nice moist chicken breast. This also works well for Cornish game hens and pork chops.





Serve with a rice pilaf, white rice, mashed potatoes or roasted potatoes and a steamed veggie like whole green beans, baby carrots, broccoli or corn.





Baked Chicken





Marinate your chicken pieces in Italian dressing for about 1 hour then roll in Italian style bread crumbs that have Parmesan and Romano cheeses mixed in - bake at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. Serve with smashed potatoes, green beans and maybe some gravy. It is easy, fast and very tasty.

Here's a gorgeous recipe to treat yourself!! Different and delicious and definitely impressive!





Here we go:(This recipe is for about 4 breasts,but you could adjust , depending on the quantity you need to cook or the size of the portions)





Pound breast a bit with a mallet(or a rolling pin!), to flatten.


Cut each one in half.


Dredge with flour.


Keep aside.





1 eggplant(aurbegine)Slice into thickish rounds and cook on oiled grill till golden.





*I do it on my George Foreman grill but an ordinary skillet will also do or you could just pop them in to a hot oven after drizzling with some oil.*





Chop an onion.


Slice about 8 button mushrooms(white)





Heat 1 - 2 tablespoons of butter or oil





Add in 1 chopped onion,cook for 3 mins until just 'pink'.





Add in 1 full teaspoon of black mustard seeds





Throw in the mushrooms along with 1 teaspoon of ground garlic.


(If you feeling brave,you could put in 1 teaspoon of ground green chili or just leave it out.)





Cook for a little while ,then throw in floured chicken breasts.Add salt to taste and a grinding of black pepper.


Cook till chicken is well coated with the other ingredients and LIGHTLY browned.





Pour in 1 tub (250-300ml fresh cream) and mix till thickened a bit.Turn off heat.


Layer chicken with sauce , top with eggplant slices,repeat until all is used up.Sprinkle cheese on top and put into a hot oven to melt cheese.





Serve with a tossed salad and some home made chips.


Maybe some bread as well to mop up the sauce!
I've never made it with the bones in it but I'm sure you could. Try deboning it first if possible though.





Apple chicken





2 chicken breasts


salt


oil


2 tsp. minced garlic


1 C chopped apple


3/4 C apple juice





Salt each side of the chicken and brown on a skillet for about 4 minutes on each side. Remove and keep warm. Sautee the garlic and apples in the oil. Add the apple juice and let simmer for a few minutes. Place the chicken in a baking pan and pour in the apple mix. Bake for 30-40 minutes at 375 turning chicken over halfway through cooking time.
leave the bone in


it is tastier and more tender that way


find some new spices you have been wanting to use


cut the potatoes in quarters


put in casserole dish with some chicken stock


cover and let cook





try browining them first before putting in the casserole dish





cover the dish


cook at 325 for about an hour


make sure there is enough liquid to cover potatoes
How about taking the bone out?
