Looking for recipes using chicken leg quarters - have any?

As a lot of you out there, I am doing my best to save money. They have chicken leg quarters on sale here this week for $0.39/lb - which is pretty good. Do you have any good recipes using them?Looking for recipes using chicken leg quarters - have any?
Stuffed leg quarters (I have seen a varation on this somewhere, but here's the original)


4 chicken leg quarters, skin on


1 box Stove Top stuffing


2 small zucchini, grated (or to taste if you find you have too much)


1 cup grated Swiss cheese


BBQ sauce





Directions: Prepare the stuffing mix according to package directions, and set aside to cool. Mix together the cooled stuffing, the shredded zucchini, and 3/4 of the Swiss cheese. Using your fingers, loosen the skin on the leg quarters. Place the zucchini mixture under the skin, stuffing as much as you can under the thighs and the drumsticks. Place the chicken on a sheet pan and bake for 30-35 minutes in a 350潞 oven.





Baste the tops of the quarters with bbq sauce %26amp; bake an additional 5 minutes for a glaze.

Soft Tacos - Chop up left over, de-boned chicken and heat up in a frying pan with 8 ounces or so of tomato sauce and some taco seasoning. Serve with all of the usual taco items such as chopped lettuce, shredded cheese, black olives, etc.








Chicken Pot Pie - This down home, frugal family favorite is very inexpensive and uses thrifty vegetable choices as well such as carrots, onions and celery. Very affordable!








Soup - There are more recipe options for this than I could possibly list in one posting. Besides, if you are trying to carve out every extra penny, it's probably more thrifty to use whatever you have on hand, right?








Chicken, Cheese and Pesto Calzones - OK, the pesto isn't exactly a penny pinching item if you don't make and can your own. But this recipe idea is a way to put a little pizazz into your family's weekly menu without completely breaking the bank.








Burritos - Mix in that left over chopped chicken with some refried beans and use to fill a tortilla. Accent with your favorite Mexican style toppings.








Pizza - What are some of the yummy gourmet pizza ideas you've seen using chicken? Try them out at home! BBQ sauce instead of the traditional Italian red? Alfredo? Pesto? Get creative!








Go Greek - Mix with some yogurt and your favorite Greek style seasoning mix and serve in a pita bread.








Salad Power - Use with black beans and corn to give a Mexican feel to your green salad, try your hand at a homemade chicken Ceasar, or go traditional with a basic chef's salad.








Fried Rice - This is a dirt cheap way to have an ethnic meal for dinner for around 15 cents per serving.

This Is Delicious:





4 leg quarters (skinless)


1 cup bbq sauce (any flavor)(honey smoke perferred)


1.5 tsp of southwestern seasoning


1 tsp salt and pepper


1 tsp chicken fajita seasoning





Skin 4 leg quarters Set oven to 400 degrees Marinate leg quarters in all ingredients for 15 minutes.


Take a cookie sheet or flat sheet and a sheet of foil, and wrap leg quarters in foil, make sure no opening, seal it up tight.





Cook for 45 minutes. When done spoon remaining sauce over chicken till glaze appears, then serve.

Stock up and put them in the freezer.





I do them a couple of different ways:





Put b-b-q sauce between the skin and meat of the chicken. Add a bit of melted butter to the top-not much just to get it a bit crispy. Bake and serve with a little more b-b-q sauce on top.





I also drizzle different dressings suach as italian, raspberry vinegiarette, etc.. in a baggie before I put the chicken in the freezer.





Maelt up some butter and add garlic, and lemon juice. Spoon 1-2 tbsp of the butter sauce under the skin and then drizzle a bit more on top.





Make up an heard seasoning blend and sprinkle that on top and bake.





Or this crock pot recipe is yummy as wel and the left over work well for soup, quesadillas, tacos, encheladas, b-b-q chicken sandwiches etc...





Crock Pot Chicken Salsa Curry





10 chicken thighs-bone in


1 jar of your fav salsa


1/2 onion chopped


1 tablespoon curry (or about 1/2 if you don't like a strong curry taste)


1/2 cup sour cream





Place the chicken in the crock pot. Mix the onion, curry and salsa. Pour over the chicken and cook on low for about 6-8 hours.





When the chicken is done take it out of the crock pot and put on a serving plate. Add the sour cream and mix well. Spoon the sauce over the chicken.





This would go well with rice or cous cous.





If you don't have crock pot you could also do this is a roasting pan or a casserole dish with a cover or tin foil(about 200) check it though since it may cook faster. I have only done this once in the ovena dn I think I cooked it for 3-4 hours. This recipe is easy to do smaller portions of as well.
1. boil chicken,strain when done and save broth.Peel a few potatoes and cut into about 1 inch chunks ,cut up a piece of celery,a carrot and an onion,Boil in your broth with a few bullion cubes,when halfway done add frozen sweet corn and your chicken,cook till done.If you like dough balls while it is boiling mix eggs and dough in a bowl it has to be thick but sticky,drop into your soup until they float to top of soup.Chicken corn soup homemade by you!
