Spicy Oven Fried Chicken





1 cup buttermilk


1/4 cup hot pepper sauce


4 boneless, skinless chicken breast halves


1 cup dry bread crumbs


1/2 cup all-purpose flour


2 teaspoons onion powder


1 teaspoon cornstarch


1 teaspoon white sugar


1 teaspoon garlic salt


1 teaspoon salt


1 teaspoon pepper


1 teaspoon paprika


1/2 teaspoon cayenne pepper


2 tablespoons olive oil





In a medium bowl, mix the buttermilk and hot pepper sauce. Place chicken in the mixture to coat. Cover, and marinate in the refrigerator 8 hours or overnight.


Preheat oven to 350 degrees F (175 degrees C).


In a separate medium bowl, mix dry bread crumbs, flour, onion powder, cornstarch, white sugar, garlic salt, salt, pepper, paprika, and cayenne pepper. Thoroughly coat the chicken in the bread crumb mixture.


Heat the olive oil in a medium skillet over medium heat, and cook chicken 5 to 7 minutes on each side, until lightly browned.


Transfer chicken to a medium baking dish, and bake in the preheated oven 30 minutes, until no longer pink and juices run clear.

Breaded Chicken Limone





4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness


2 eggs, lightly beaten


1 cup all-purpose flour


2 cups bread crumbs


salt and pepper to taste


1 teaspoon cayenne pepper





1 tablespoon olive oil


4 tablespoons butter, divided


3 cloves garlic, minced


1 (10 ounce) package frozen Brussels sprouts, thawed and diced


2 tablespoons all-purpose flour


3/4 cup water


2 tablespoons lemon juice


1 (16 ounce) can navy beans, drained


1 tablespoon white sugar


1/4 cup grated Parmesan cheese


1 teaspoon salt


ground black pepper to taste


1 tablespoon chopped fresh parsley, for garnish


2 tablespoons grated Parmesan cheese for topping





Preheat oven to 400 degrees F (200 degrees C).


Season flour, eggs, and bread crumbs with salt and pepper. Mix cayenne pepper into the flour only. Dip each breast into flour, then into the beaten eggs, and then into the bread crumbs, coating evenly. Place onto a greased cookie sheet. Bake for 15 minutes on each side or until brown and crispy.


While chicken bakes, heat oil and 2 tablespoons of the butter in a skillet over medium heat. Add garlic and Brussels sprouts and stir until garlic releases its fragrance and sprouts are heated through, about 2 minutes.


Stir in the flour. Then add the water, lemon juice, drained beans, and sugar. Stir over medium heat until sauce thickens, about 8 minutes. Add additional water if sauce is too thick. Remove from the heat and stir in remaining butter, 1/4 cup Parmesan cheese, salt and pepper.


Place each piece of chicken onto a serving plate. Spoon the sauce over it and garnish with chopped parsley and remaining Parmesan cheese.

I made ranch fried chicken last night and it was SO good.





Get a package of dry ranch dressing or dip mix (store brand is ok)


Chicken Breasts


Flour


Eggs





Coat the out side of the chicken with a thin layer or the ranch mix


dip the chicken in the egg


then straight from the egg to the flour cover the chicken well with the flour.





Heat about 1/2 inch of oil on medium in pan, put chicken in. Takes about 7 min on each side.





I served it with fresh steamed broccoli and cheese and rice and gravy

Crispy Parmesan Chicken Breasts





鈥?1/3 cup Grated Parmesan Cheese


鈥?1/4 cup seasoned dry bread crumbs


鈥?1/4 teaspoon paprika


鈥?1/4 teaspoon salt


鈥?1/4 teaspoon black pepper


鈥?6 boneless, skinless chicken breast halves


鈥?3 tablespoons butter or margarine melted





1. Pre-heat oven to 400 Degrees, Mix cheese, crumbs and seasonings in a shallow dish


2. Dip chicken in butter, coat with cheese mixture, place in a shallow baking pan


3. Bake 23 minutes or until chicken is cooked through





Yield: 6 servings



Italian Herb Baked Chicken





1 pound boneless skinless chicken breasts


1 tablespoon dried sage


1 tablespoon dried marjoram


1 tablespoon dried rosemary


3 slices of bread or plain bread crumbs


1/2 cup shredded Mozzarella cheese


1 egg


1/2 cup milk





If you are using bread slices, tear them apart into chunks and place them in a food chopper. Chop until crumb texture. Mix crumbs with spices and cheese. Whisk together egg and milk. Coat chicken with crumbs and dip in egg/milk mixture. Coat chicken again. Bake at 325F for 20 minutes or until juices run clear.
My mom use to make baked chicken. I got to crush up saltine crackers. Salt and pepper the chicken, dip in egg and milk mixture, then the crackers twice and dot each with a pat of butter . Bake 350 for 30-35 minutes .
Pecan Breaded Chicken Breasts





INGREDIENTS





* 4 skinless, boneless chicken breasts


* 2 tablespoons real maple syrup


* 1 cup chopped pecans


* 3 tablespoons all-purpose flour


* 1 teaspoon salt


* 2 tablespoons butter


* 1 tablespoon vegetable oil





DIRECTIONS





1. On waxed paper, combine pecans, flour, and salt.


2. Brush chicken breasts all over with maple syrup. Coat chicken breasts completely with nut mixture.


3. In a large skillet over medium heat, melt butter and stir in the vegetable oil. Add chicken, and cook for 12 to 15 minutes until chicken is browned on all sides and tender.

4 boneless skinless chicken breast

1 tsp garlic powder


1 tsp mc cormick chicken season


1 tsp italian season


1 tsp parsley


1/4 cup GRATED parmesan cheese


1/3 cup milk


1 tomato chopped


1/4 cup olive oil (garlic flavored is the best)





Parmesan sauce


3/4 cup heavy whipping cream


1/4 cup butter


1 cup SHREDDED parmesan cheese


1 1/2 tsp garlic powder


1 tsp parsley


1 tsp italian season





Preheat oven to 400 degrees. Mix bread crumbs, parmesan, and seasons in a shallow bowl. Pour milk also into a shallow bowl. Dip chicken into milk and then coat with bread crumbs. Put into oven in a glass baking dish for about 30 minutes. Mix all the ingredients for the sauce togather and simmer on med low stirring constantly. Watch the sauce really carefuly because the cheese has to fully melt. Shredded works so much better then grated, it makes a much smoother sauce. When the chicken is done brush all over with the oil, and put a frying pan on at med hi heat. Fry on each side long enough to brown it up. (mostly for show, but not necessary) Place on serving plates and top with tomato. Pour sauce over the top. I think the sauce would also be gbreat on broccoli. It's alot like Applebees Parmesan Sauce only much better. Message me if you have any questions!
