GREEK LEMON CHICKEN AND POTATOES





1 broiler chicken or breasts


Salt and pepper to taste


Oregano


Garlic powder


Lemon juice


Olive oil


6 lg. potatoes





Preheat oven to 350 degrees. Place chicken in baking dish. Salt, pepper, and garlic to taste; use enough to put some in the bottom of dish. Cover chicken with oregano. Pour olive oil over entire chicken, covering bottom of dish. Add 1 1/2 cups of water to bottom of dish.


Bake at 350 degrees until golden and done. Baste frequently using juices. Add additional water and lemon juice to bottom of dish keeping about 1 inch of juice. Remove chicken leaving juice.





Cut and peel potatoes into quarters. Deep fry until golden brown. Place potatoes in baking dish with lemon and oil juice. Sprinkle with salt, pepper and oregano. Add additional water/lemon juice as needed (the more lemon the better). Juice should cover at least half of potatoes. Baste frequently.








GREEK TOMATO - CHICKEN WITH POTATOES





6 chicken breasts with skins


2 chicken bouillon cubes


4-5 med. potatoes, peeled %26amp; cut into quarters lengthwise


1/2 lemon


Garlic powder, oregano, salt %26amp; pepper


1 can stewed tomatoes





You will also need aluminum foil to cover dish for first hour of cooking.


Arrange chicken breasts in baking pan. Sprinkle with garlic powder, salt and pepper and oregano. (Just cover each piece lightly with spices.) Add bouillon cubes. Cover with aluminum foil; add approximately 1/2 cup water. Bake for 1 hour at 350 degrees, checking to make sure there is always a small amount of water in bottom of pan.





After about 1 hour, remove foil (leave off). Add potatoes and stewed tomatoes. Cook until potatoes are soft and chicken has started to brown. Keep checking for liquid in pan! Squeeze lemon over top and serve.





EASY VEGETABLE SOUP





2 cans Swanson's chicken broth


2 cans water


2 stalks celery, sliced


2 carrots, sliced round


2 med. onions, chopped


2 med. potatoes, diced


1-2 c. chopped cabbage


1-2 cans tomato juice


Salt


Pepper


1/4 to 1/2 tsp. Cavendar's Greek Seasoning (optional)





Mix first 5 ingredients in large kettle. Cover, bring to boil. Simmer 30 minutes. Add potatoes and cabbage. Cook 10-15 minutes. Add tomato juice and seasonings. Simmer 2-3 minutes. Can substitute 1 cup small elbow macaroni for potatoes.

1 Boneless, skinless chicken breast, cut into thin strips


1 cup Thinly sliced green or red peppers p


录 pounds Pea pods, cut in half


2 tablespoon Vegetable oil


2 Garlic cloves, minced


1 teaspoon Minced fresh ginger root


1 tablespoon Cornstarch

2 tablespoon Soy sauce


3 Fresh Idaho potatoes,

In 2-quart microwave-safe casserole combine chicken, peppers, pea pods, oil, garlic and ginger. Cover loosely with plastic wrap; cook on High 3 to 4 minutes or just until chicken turns white, stirring twice. In small bowl stir cornstarch, broth and soy sauce until smooth. Stir into chicken. Re-cover; cook on High 3 to 4 minutes or until thickened, stirring twice. Cut potatoes in half lengthwise, fluff with fork. Top with chicken mixture. Makes 3 to 6 servings

Easy Chicken With Potatoes


4 boneless, skinless chicken breast halves


1/2 cup Italian salad dressing


1 teaspoon Italian seasoning (or mix basil, oregano, crushed red pepper, and garlic powder to equal same)


1/2 cup grated Parmesan or Romano cheese


4 to 6 medium potatoes, peeled and cut into wedges or thick slices


PREPARATION:


Place chicken in bottom of Crock Pot. Sprinkle with half of the Italian dressing, spices, and the grated cheese. Put the potatoes on top or around the chicken. Sprinkle with the rest of the dressing, spices, and cheese.


Cook on low for about 6-8 hours, or until the chicken is done and potatoes are tender
