Chicken Salad Recipes?

What are some REALLY good chicken salad recipes?Chicken Salad Recipes?
This is awesome. Cut up some leftover chicken into very small pieces (or cook a chicken breast or two in the oven- or even boil it) Add some salt and pepper. Then moisten chicken with store bought Italiain dressing. Wishbone is good. You may want to add a little celery and/or onion. Then let the chicken marinate in the refrigerator for a little while. Add mayonaisse to taste. All ingredients should be adjusted to taste, but the Italian dressing really really makes this.Chicken Salad Recipes?

Low Carb Hot or Cold Chicken Salad


Ingredients:


8 oz chicken


3-4 T mayonnaise


1 cup shredded Cheddar cheese


1 T Dijon mustard


1 T ea chopped: onion, red pepper, parsley


4 slices bacon, cooked crisp, crumbled


Mix all ingredients together.


Place in refrigerator to cool or bake at 350 for 20 minutes until hot and bubbly.


Serves 2 at 3 carbs

CHICKEN AND SWEET POTATO SALAD


Serves 4


Ingredients


2 Chicken breasts(boneless) (boiled)


2 large sized Sweet potatoes (boiled)


1/2 small sized Red cabbage (shredded)


1/2 cup Cottage cheese (grated)


4 tbsps Mayonnaise


1 tsp French mustard


1/4 tsp White pepper powder


1/2 tsp Sugar


Salt to taste


2 inch stalk Celery (chopped)





Method


Cut the boiled chicken into matchstick strips and set aside. Peel the boiled sweet potatoes and cut into half inch sized cubes.Mix cottage cheese, mayonnaise, French mustard, white pepper powder, sugar and salt in a food processor and blend at high speed until smooth. Transfer the mixture into a large bowl.Add chicken, potatoes, cabbage and celery to the blended mixture and toss to mix well or stir gently.Serve chilled.
1) get out the followin ingredients:


3-5 pieces of chicken shredded in blender or food processer


1 or 2 stalks of celery(finely chopped)


2-4 boiled eggs(cut finely)


onions, optional


1 cup of mayo


4-7 pickles( not big, but medium size finely chopped)


salt and pepper





Add the shredded chicken,chopped pickles,boiled eggs,celery, and onions(optional). add in mayo a little at a time. add salt and pepper and taste. Continue adding mayo, salt, and pepper til at taste u desire. Enjoy!!!!
If you want it to be really good, then you cannot used canned chicken. The best I've ever made was from the meat of a rotisserie chicken--one of the precooked ones at Costco, Sam's Club, or the grocery store. Chop the meat with the skin in a food processor. Then, just add enough mayo (not salad dressing/Miracle Whip) for your taste, and some chopped boiled eggs. I also love gourmet black olives (from an olive bar at the deil) in my chicken salad. Onions and celery are good too. This is not the healthiest of recipes, but you did ask for a great tasting one. lol

Introduction








This is great as a sandwich filling or on a bed of crisp butter lettuce as lunch or a light supper. The raisins add a unique flavor contrast, but for non raisin lovers, chopped apple pineapple tidbits or green grapes can be used. Try this recipe with leftover turkey and use dried cranberries instead od raisins....yummmmm


Ingredients








4 large boneless, skinless chicken breasts of 5 cups diced cooked chicken


1/2 cup raisins


1/2 cup toasted chopped pecans or walnuts (optional)


3 stalks celery, diced,


1/4 cup minced onion


1/4 cup fresh parsley, minced (or 1 tablespoon dried)


1/2 cup mayonnaise


1/4 tsp seasoned salt


1/8 tsp white pepper


1/4 tsp onion powder


Salt and pepper


4 cups water








Directions


Step: 1





Poach chicken breast in water, seasoned with salt and pepper.


Step: 2While chicken is poaching, chop onion and celery and combine with raisins and nuts. Combine mayonnaise and seasonngs and set aside.


Step: 3When chicken is done, remove from water and dice while still hot. Add hot chicken to vegetable mixture( this step plumps the raisins) Add dressing and mix well. Adjust salt if needed. Cover and chill.

BBQ Southwestern Chicken Salad:





8 cups shredded lettuce


1/2 cup canned black beans, rinsed and drained


1/2 cup canned corn, drained


1/2 cup light ranch dressing


2 cups chopped cooked, boneless, skinless chicken breast


1/3 cup bottled BBQ sauce


2 cups thin jicama strips or carrots





Prep time: 10 minutes


Cooking time: about 3 minutes





1. Put lettuce, black beans, corn, and ranch dressing in a large serving bowl and toss.





2. In a small mixing bowl, stir together the chicken pieces and the BBQ sauce.





3. Serve salads individually, with about 2 cups of the lettuce mixture, topped with 1/2 cup of the chicken mixture and 1/2 cup of the jicama strips.





How kids can help: Drain and measure beans and corn; measure and add ranch dressing; toss salad ingredients; toss chicken with BBQ sauce.

open a can of white chicken add mayo celery pickle relish can add onion, tomato , black olives green olives
Take a can of chicken, add a little mayonaise, slice some apples really thin, get some slices of extra sharp cheese, and toast the bread. It's to die for.





Sorry that I don't have exact measurements though.
