Crock Pot Chicken Ratatouille
This low fat crock pot recipe is so easy - just throw it all in the pot.
Servings: 8 - 1 1/2 cup servings
鈥?4 boneless skinless chicken breast halves, cut into 1 inch cubes
鈥?1 - 26 ounce jar prepared spaghetti sauce
鈥?1 medium eggplant, peeled and chopped
鈥?2 medium tomatoes, chopped
鈥?2 small zucchini, sliced
鈥?1 medium green bell pepper, cut in 1 inch chunks
鈥?1 large onion, chopped
鈥?3 cloves garlic, minced
鈥?1 teaspoon dried basil
鈥?1 teaspoon dried oregano
鈥?1/2 teaspoon salt
Combine all ingredients in a 3 1/2 or 4 quart crock pot. Mix well. Cover and cook on the low setting for 6 to 8 hours.

J/K! There is always chicken soup or chicken %26amp; dumplings (OK,fattening) or chicken %26amp; rice (BO-ring), but with lots of vegetables it's good!
There are some good slow cooker or crockpot recipes here. You should be able to find some for chicken.
hmmm, off the top of my head I'd say...
start with liquid (stock, water, etc) add chicken, veggies, and barley (always good). turn on and go do something else for a while... ;-)
oh! spices and seasonings!! don't forget to add those...
Crockpot Chicken Parmigiana
Ingredients
(6 servings)
3 Chicken breasts
1 Small egg plant sliced
1 Egg
10 1/2 oz Can pizza sauce
1 ts Salt
6 Slices mozzarella cheese
1/4 ts Pepper
1 c Dry bread crumbs
1/2 c Butter
Instructions
If using whole chicken breasts, cut into halves. In a bowl beat egg, salt, and pepper. Dip chicken into the egg, then coat with crumbs. In a large skillet or crock-pot with a browning unit, saute chicken in the butter. Arrange eggplant and the chicken in pot, (place eggplant on the bottom or it will not cook completely.) Pour pizza sauce over the chicken. Cover and cook on low 6 to 8 hours. Add ) mozzarella cheese; sprinkle Parmesan cheese on top. Cover and cook 15 minutes.
Crockpot Chicken Stroganoff
Ingredients

6 Boneless Chicken Breasts
16 oz Sour cream
1 cn Cream of Mushroom soup
1 pk Onion Soup mix, Lipton's
Instructions
Mix all together and put into crockpot. Cook on low for 4 -6 hours. Or until chicken is tender. Serve over cooked noodles or rice.
Crockpot Cowloon Chicken
Ingredients
(5 servings)
3 1/2 lb Chicken
Salt
Pepper
1/4 ts Ground ginger
1 Clove Garlic; minced
1 c Chicken broth
8 1/2 oz Pineapple; sliced in syrup
4 oz Water chestnuts; drained sli
4 Green onions; diagonally cut
1/4 c Cornstarch
1/4 c Soy sauce
1 tb Vinegar
Instructions
Sprinkle chicken with salt and pepper. Place in slow cooker. Combine ginger, garlic, broth and syrup from pineapple; set aside. Cut pineapple slices into fourths. Arrange pineapple and water chestnuts over chicken. Pour ginger sauce over all. Cover and cook on high 1 hour; reduce heat to low and cook an additional 2 to 3 hours or until chicken is tender (it can be cooked up to 8 hours). Add green onions. Dissolve cornstarch in soy sauce and vinegar. Stir into pot. Cover and cook on high 10 to 15 minutes or until slightly thickened. Serve with crisp Chinese noodles.
Crockpot Sweet and Sour Chicken
Ingredients
(4 servings)
1 Carrot; cut in pieces
1 Green pepper; cut in pieces
1 Med Onion; quartered
4 Boneless chicken breasts; *
3 tb Instant tapioca; (heaping)
8 oz Pineapple chunks; canned, **
2 tb Candied ginger; or fresh,***
1/3 c Dark brown sugar; packed
1/3 c Red wine vinegar
1 tb Soy sauce
1 ts Instant Chicken bouillon
1/2 ts Garlic powder
1 Med Green pepper; strips
10 Fresh cilantro leaves; opt.
Rice; hot, cooked
Instructions
*Remove all skin and any fat from chicken before cooking. ** DO NOT DRAIN the pineapple, include the juice in the crockpot. ***Mince the ginger if using fresh ginger. For crockpot cooking -Put vegs. in bottom of crockpot. Sprinkle tapioca over vegetables. Place chicken atop vegetables. Combine all other ingreds. except rice in a small bowl. Pour over chicken. Cover crockpot and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave.
If you buy the healthy request soup this recipe will be low in fat and the sodium will be cut. You need your chicken breasts...one can of condensed cream of mushroom soup...one pkg. of Lipton or Knorr onion soup mix. Place your chicken in the crock along with any veggie under the sun...top with the soup and soup mix. Spread evenly and let the pot do the work. Its very simple, very tasty, and relatively healthy.

1 (15 ounce) can whole peeled tomatoes, mashed

1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil
DIRECTIONS
Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
Preheat oven to 400 degrees F (200 degrees C).
Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.
Cuban-Style Slow-Cooker Chicken Fricassee

1 leaf fresh sage
salt and pepper to taste
2 pounds chicken leg quarters
DIRECTIONS
In a medium bowl, combine onion, garlic, bell pepper, and potatoes. Stir in tomato sauce and wine; season with cumin, sage leaf, and salt and pepper. Place chicken legs in slow cooker, and pour mixture over chicken. Cover, and cook on Low heat until juices run clear, about 6 to 8 hours.
