My boyfriend is really, really picky when it comes to food. Because of this, we go through the same 4 or 5 chicken recipes constantly...I want to try a new, easy recipe for roast chicken that doesn't involve too many ingredients. I use boneless skinless chicken breasts. Any ideas?Simple recipes for roast chicken breast?
i roasted a whole chicken with these spices that i think would be great just the same on the breasts...
paprika
basil
oregano
garlic powder
cayenne pepper (to your taste)
salt
pepper
use what you like and eye the spices...always best that way! this was super easy and added a kick with the cayenne...i roasted with potatoes and onion slices and the sauce from the chicken made the potatoes amazing! everything was very yummy :) hope this helps!Simple recipes for roast chicken breast?
chicken paprikas (bohemain)
2 lb chicken breast cut up
2 T butter
1/2 T sweet paprika
1/2 T flour
1/2 onion small
1/2 pt sour cream
salt to taste
sprinkle sharp cheese
pepper
take the butter %26amp; onion and brown add paprika and a dash of cayaneene pepper or dash of hot sauce
add cut up chicken little at a time and stew slowly until well done add the sour cream 1/2 T of flour and stir into the chicken mixture do not boil only stir lightly and simmer slowly until thickens slightly serve with dumplings or noodles
CHICKEN BREAST WITH ROAST POTATOES AND
GARLIC
For each serving: 8 to 10 lg. garlic cloves, peeled 1 skinned, boneless chicken breast 2 to 3 (2 inch) red skinned potatoes Dried oregano and basil
Pour olive oil in baking pan. Add garlic cloves and stir to coat with oil. Place in 350 degree oven for 10 minutes. While garlic is baking pat chicken dry. Scrub potatoes but leave peel on, cut in half. Remove baking pan from oven, add chicken and potatoes, and baste with oil. Sprinkle with equal amounts of oregano and basil to taste. Cover pan with lid or aluminum foil. Return to oven and bake 45 minutes or until potatoes are tender when pierced. Chicken will be done and garlic will be soft and sweet tasting.
CHICKEN DARLENE
2 boneless/skinless chicken breasts; ea. sliced in 1/2 horizontally
1 small vidalia onion,thinnly sliced
1 small jar of roasted red peppers; drained, patted dry and sliced into strips
2 tbsp pesto sauce
2-4 thin slices of smoked gouda cheese
2-4 baby portabello mushrooms, sliced
1/4 c italian bread crumbs
1 tbsp parmesan cheese
1 tbsp chilled butter
black pepper
Can be assembled right in baking dish. Start with bottom half of each breast, placed in dish side by side. Place 1 tbsp. of pesto sauce on each breast bottom and spread evenly.
Next place strips of roasted red peppers (about 5-6 thin strips). Separate the sliced onion into rings and place 3-4 rings per breast, adding more to taste. Next place sliced portabello mushrooms to cover onion layer. Last layer is the smoked Gouda cheese, using enough to cover the last layer.
Top each with the other half of chicken breast.
Blend bread crumbs and parmesan cheese and sprinkle on top of chicken. Season with black pepper to taste.
Cut butter into chunks and place on top of crumbs.
Bake in a pre-heated 375 degree oven for 20-30 minutes. Bake covered with foil for the first 15 minutes, uncovered for remaining time until browned. Yields 2 sevings
INGREDIENTS:
1/2 cup margarine or butter
2 cloves garlic, minced
8 boneless chicken breast halves
2/3 cup grated parmesan cheese
1 cup fine dry bread crumbs
1/4 cup chopped fresh parsley or 2 tablespoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon ground black pepper
PREPARATION:
In a saucepan over low heat, melt butter with minced garlic. Make a crumb mixture with bread crumbs, parmesan cheese, parsley, salt, and pepper. Dip chicken pieces in butter; roll in crumb mixture. Place in a 9- x13-inch baking dish and bake at 350掳 for 50 to 60 minutes.
Try spreading a little barbecue sauce over the chicken, then putting a few strips of uncooked bacon on top of each one (3 or 4 strips each gives a good covering), and then topping it off with more barbecue sauce. Put them in the oven for 30-45 minutes at 350 degrees, or until they're cooked through.
You can't get much simpler than 3 ingredients! Good side items for this are cornbread and a green salad.
I suggest getting some cookbooks with simple recipes in smaller portions. Most cookbooks are meant to serve a family, which mean you have to either figure out how to make less or have lots of leftovers. Two of my favorite cookbooks are ';Help! You came to the right place. Buy some Adobo spice with the red lid. Sprinkle it on both sides of each breast. Warm some oil (olive or canola) and some butter or substitute (about a Tablespoon of each) on the stove top in a skillet (if the skillet is oven-proof, all the better). Sear the breasts in the melted oils on medium-medium high heat (6 or 7 on a dial with numbers). Put them in a baking dish and bake in oven at 350 for about 20-30 minutes or until done. I call it Adobo chicken, and I've had a ton of family members ask for the recipe. I hope you enjoy it.
This has very few ingredients. Chicken breasts,mayonaise, salt,pepper,oil or butter %26amp; cornflake crumbs. Dip dry breasts inmayo till coated well. Then dip in corn flake crumbs till well coated. Then bake on cookie sheet till done,@ 400 degrees for about 25 mins. If breasts are fat,either cut into center to eval if done then give it 10 more mins.Don't forget to oil cookie sheet first.
Brush the skin with oil and sprinkle with a little salt and orange zest. Let stand for about 30 minutes and then put under a pre heated grill for 6-8 minutes per side 8'; from the heat.
It will be cooked when it is still soft and the juices run clear when pressed.
