Mix canned pineapple, juice, ginger, and a little soy sauce. Pour it over the chicken and then cook the chicken in the microwave on medium for 5 minutes then on high for 5 minutes. Make sure the chicken is done.

If it's on the bone, I would bake it at 400 in a covered pan with some bbq sauce.
Off the bone, I would marinate it in plain soysauce and then bake it uncovered.
Try this one out - it's called ';Yogurt Chicken'; It's really tasty, and the yogurt keeps the chicken really juicy and moist while cooking.
All you need is some plain yogurt, breadcrumbs (I buy the Progresso Italian seasoned ones), and of course your chicken.
Rinse the chicken breast, and pat dry. Coat the breast in the plain yogurt, then roll in breadcrumbs. Bake 25-30 or until cooked. - Enjoy!

cooking it (bitesized chunks or whole) in olive oil and browning it with parmesan cheese then throwing it on top of pasta (spaghetti probably best) with a sauce of your choice or even just butter/more parmesan (mizithra cheese is wonderful too if you can find it) is really good.
