CHICKEN BREAST WITH COCONUT SAUCE
2 tablespoons peanut or olive oil
2 tablespoons garlic, minced
3/4 cup Vidalia onions, diced
8 chicken breasts, boned, skinned, pounded to 1/2'; thickness
In a heavy bottomed skillet, saut茅 onions and garlic. Add chicken breasts and brown lightly. Do not allow garlic to brown (you might want to add it towards the end of the saut茅).
Sauce:
3/4 cup white vinegar
2 1/2 cups water
1 chicken bouillon cube
2 cloves garlic
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 teaspoon oregano
1 teaspoon ground bay leaf
1/2 cup soy sauce (low sodium)
1 1/2 tablespoons sugar
In a blender, combine sauce ingredients. Add to skillet. Cover and simmer, stirring occasionally, until chicken is tender.
To Serve:
1/2 cup canned coconut milk
1/4 cup fresh parsley, chopped
Pour coconut over chicken and allow to simmer an additional 20 minutes. Place on serving dish and ladle over with sauce. Garnish with chopped parsley.

Adobo
This sauce is basic to many Filipino recipes. It can be used for fish as well as meat. Try a bit when cooking chicken.
2 1/2 lbs chicken wings and thigh
5 cloves garlic
1 bay leaf
1 tsp crushed pepper corn
1/2 cup wine vinegar
1/4 cup soy sauce
Peel and mince the garlic.
Mix the garlic, pepper corn, and wine vinegar together in a mixing bowl. Marinate the chicken for 11/2 to 2 hours. Place the chicken and the marinade in a deep pan and cook for 30 minutes at medium heat. Add 1 cup water for the chicken to cook. Add bay leaf and salt to taste. Reduce the sauce. Serve with rice.
You can use the adobo as a marinade for steak or for other meats. Simply allow the meat to marinate in it for 24 hours or so in the refrigerator.

If you like spicy try this...it's called Picante Chicken...all you need besides your boneless/skinless chicken is Pace Picante sauce and some cheddar cheese(which they sell lowfat)...place the chicken in a ovenproof casserole dish or whatever and pour the salsa over the chicken until WELL covered...than bake at 350F(covered) for 45min..than uncover and sprinkle as much cheese as you want and bake until cheese is bubbly...serve with California veggies or whatever veggie/salad you like...good stuff and easy...enjoy!

Easy Crab Cakes
1/4 cup Tartar Sauce
1 egg(s)
2 tablespoons finely chopped red bell pepper(s)
2 tablespoons finely chopped green onion(s)
1/4 teaspoon Lawry鈥檚庐 Seasoned Salt
1/4 teaspoon hot pepper sauce, *
1 can (6 oz.) crabmeat, drained and flaked
2/3-cup plain dry bread crumbs
1 tablespoon Butter
1. In medium bowl, combine Hellmann's Tartar Sauce, egg, red pepper, green onions, seasoned salt and hot pepper sauce. Stir in crabmeat and 1/3 cup breadcrumbs. Shape crab mixture into 4 patties, then dip in remaining 1/3-cup breadcrumbs until evenly coated. 2. In 10-inch nonstick skillet, melt Spread over medium heat and cook crab cakes, turning once, 6 minutes or until golden brown. Honey Mustard Chicken Nuggets
1/4 cup Mayonnaise
1/4 cup Dijonnaise or Creamy Dijon Mustard
2 tablespoons honey
1/4 teaspoon salt
1 pound boneless, skinless chicken breast halves cut into 1-inch pieces
1 1/2 cups crumbled corn flakes, you may substitute cracker crumbs
1. Preheat oven to 400掳. In medium bowl, combine Mayonnaise, creamy mustard, honey and salt. 2. Add chicken; stir to coat. Roll chicken in crumbs. 3. Bake 12 minutes or until chicken is thoroughly cooked. Serves: 5 Preparation Time: 5 minute(s) Cook Time: 12 minute(s)
Crab-Stuffed Mushrooms
1/3 cup Mayonnaise
3 tablespoons Italian seasoned dry breadcrumbs
2 tablespoons grated Parmesan cheese
1 clove(s) garlic, finely chopped
1 can (6-1/2 oz.) crabmeat or 1cup frozen crabmeat, thawed
18 medium mushrooms, stems removed
1. Preheat oven to 400掳. 2. In small bowl, blend Mayonnaise, breadcrumbs, cheese and garlic; fold in crabmeat. Evenly spoon mixture into mushroom caps. 3. On baking sheet, arrange mushroom caps.

Crock Pot Salmon Bake
Ingredients
2- 15 oz. cans Salmon
4 cups Bread crumbs
1 can Tomatoes
1 chopped green pepper
1 teaspoons Lemon juice
1 can Cream of onion soup
1 can Cream of celery soup
4 well beaten Eggs
1 tsp. garlic powder
1 tsp. Greek seasoning
2 Chicken bouillon cubes
1/4 cup milk
Preparation
Grease crock pot liner. Combine all ingredients except celery soup %26amp; milk. Pour into crock pot. Cover %26amp; cook on low heat for approximately 5 hours. Combine cream of celery soup with 1/2 cup of milk and heat in saucepan. Use as a sauce for salmon bake.

Take the amount of skinless chicken breast (or tenders) that is needed for your meal, roll in your choice melted butter, margarine, or oil that has had a little garlic salt, powder, or crushed clove, salt %26amp; pepper to taste, roll in cracker crumbs, place in (spray pan coated) bake dish, and depending on amount, bake 350 for 15-30 minutes or until done.
